Asian Warm Beef and Pea Salad

Asian cooking techniques are specially devised not to spend a lot of time cooking. For example, Asian beef salad: quickly fried meat, sauce rapid – and fun, three times exceeding efforts. It should be noted that the meat entered the Japanese culinary relatively recently, later than in Europe and China. In the dish there is a large number of vegetables, mushrooms and various seasonings. This recipe of Asian beef salad is designed for six servings. For the preparation we need: 400 g of beef (shank), 100 g of celery, 100 g of chive, 80 g of carrot, 6 shiitake mushrooms (fresh), 2 cucumbers, 4 sweet peppers (green).
Ingredients for broth with beef stew : a quarter cup of sake, carrot sticks, celery leaves, onion. For dressing of Asian beef salad we need: 1.25 tbsp of salt, one-third of cup of wine vinegar, glass of olive (or other vegetable) oil, slightly more than a tbsp of sugar, pepper (to taste).

Swing a piece of meat swing into roll and tie a rope not too tightly. Transfer to a saucepan, add water so that it covered the meat thoroughly, add the sake and spices for the sake broth. Wait until boiling, remove the resulting foam and cook for 40-45 minutes without the lid on low heat. Check readiness with a wooden stick; if it enters easily into the meat, it is ready. At the same time, mix ingredients in a cup for dressing. Onions are cut into slices of half a centimeter in thickness. Remove coarse fibers from celery and cut it into sticks of 4 to 5 centimeters. Just cut carrots and cucumbers. Cut shiitake mushrooms into slices of 3 mm. Cut sweet peppers similarly. In a saucepan, boil water and blanch the mushrooms for about 20 seconds. Drain through a colander. Do the same with carrots. In the bowl of sauce add celery, onions and peppers. Ready to put the meat, remove the rigid portions and cut until it has cooled down. Add it to the salad bowl to the other components and mix thoroughly. Put carrot, cucumber and shiitake mushrooms to Asian beef salad. Put Asian beef salad into the refrigerator for at least an hour, and then bring to the table.
