If you do not have anything against the cauliflower and broccoli, as well, especially if you love these vegetables – you will enjoy this salad! It turns out very tasty, appetizing and satisfying; you can serve it as a snack or as a side dish. High taste and dietary quality of broccoli and cauliflower are known to all and sundry. Due to their complex structure and biochemical composition these two types of cabbage are easily digested by the body and are essential foods in the human diet, especially in baby food. To keep all the taste and beneficial properties of cauliflower and broccoli, they shouldn’t be digested. It is best to cook the cabbage steamed or subjected to a brief blanching. Broccoli cauliflower salad is obtained tender, tasty and low-calorie.

When you choose cauliflower, take strong and heavy head with fresh green leaves. Cabbage itself can be not only white, but grayish, yellow, ivory, and even greenish purple – it depends on the conditions in which it was grown. Color does not affect the quality of the cabbage, but the dark spots should not be there: they should either be carefully cut or it’s better not to take such a cabbage at all. Give preference to young and fresh in appearance of heads of broccoli with small delicate buds. The buds must be fully closed, bright color, and stalks – elastic to the touch. Because cauliflower, like broccoli, combined with almost all products, can be prepared by any means.

Original Broccoli Cauliflower Salad

Ingredients for broccoli cauliflower salad: 1 head of cauliflower, 1 head of broccoli, 1 carrot.
Ingredients for the filling of broccoli cauliflower salad: 4-5 tbsp of olive oil, 1.5 tbsp of lemon juice, 15 leaves of basil, 4 cloves of garlic, salt.
Disassemble cauliflower and broccoli into florets. Peel carrot and cut it into fairly thick slices. Put the carrots in boiling salted water, boil 5 minutes. Then lay out the broccoli and cauliflower, cook all together for 10 minutes. Then the contents of the pan tilt in a colander and cool under running cold water. Prepare the filling. Chop basil leaves and garlic with a knife. Put garlic and basil in a small bowl, add salt and olive oil. Then add the lemon juice and mix well. Put boiled vegetables (broccoli, cauliflower and carrots) in a bowl, add the dressing and stir, add salt if necessary. Amazing broccoli cauliflower salad is ready!
