French Lentil Salad with Kale

This variety of lentil is the most common in Europe. Fragrant and spicy, capricious and easily vulnerable, stylish and exquisite – this is the only way to describe French lentil Le Puy. Moved from the Mediterranean to France, Puy town, it has retained a distinctive oriental temperament and acquired French finesse.

Note that in French lentil salad described below, we do not use any fat. And as the glycemic index of lentils is very low, during digestion of carbohydrates contained in it large enough, this dish can be considered as dietary, and it can be recommended even for diabetics. Nevertheless, French lentil salad is very tasty and can serve as an excellent side dish to meat or poultry. Many believe these bluish lentils with marble pattern are the best grade for its unique aroma of pepper and a great ability to retain its shape after cooking. At the same time, it has a very soft skin. With it you can make a French lentil salad and a side dish to chicken, meat and fish dishes, or use in soups and casseroles.

French Lentil Salad Simple Recipe

For French lentil salad you’ll need: 2 sweet red paprika peppers, 100g of onion, 150g of carrots, 3 garlic cloves, 500 ml of chicken broth, 350g of green lentils, 250g of red tomatoes, 250g of spinach, 1 tsp of mixture of dried herbs of Provence, salt.

Cut tops of peppers directly from the stem. Cut the pepper and onion into small cubes. Cut carrots into ovals. Press garlic with the knife and blade lightly. Put the vegetables in a cast-iron or ceramic pot, add the herbs, add a little salt and add broth to prevent vegetables scorching. Mix and put the pot in the oven heated to 180 degrees for about half an hour. Do not cover with lid! Lentils are washed and soaked in warm water.

We get the pot out of the oven. Add the lentils, salt. Fill the remaining broth and then put in the oven, but now close the pot lid. Cook for another half hour. Again we obtain the pot. Add chopped tomatoes and spinach to the French lentil salad. Mix it and put on the top of peppers. Bake in the oven without the lid until ready. You can pour a little salted water if necessary.

French Lentil Salad with Kale

This French lentil salad can be used as a garnish, but you can apply it just with a piece of coarse rustic bread and a glass of red wine good. Separately serve good olive oil (for those who are not on a diet).
