Mango Kale Salad with Dressing

Ingredients for mango kale salad: 2 mangos, 1 kale, 1 Bulgarian red pepper, ½ of purple onion, 2 limes (for juice), ¼ cup of rice vinegar, 2 tbsp of olive oil, peppermint, 60 g of cashew.

Clear the mango (better to take not too ripe one) and cut into thin strips. Cut pepper and red onion in thin strips. Cut kale in half and then – into fine strips. To squeeze out the juice, cut limes in half. Throw mango, cabbage, peppers and onions in a large bowl. Pour sauce (lime juice, vinegar, oil, salt and red pepper stir). You can file a salad or just mix flavors, hold it in the fridge for an hour.

Mango, Avocado, and Feta Kale Salad

Another version of the salad is easier to prepare. For this mango kale salad you will need: 400g of kale, 1 mango, 50 g of peeled hazelnuts, 1 tbsp of honey, 1 tbsp of mustard, 1 tbsp of vegetable oil, 2-3 tbsp of vinegar, salt, ground black pepper to taste.

Remove the upper kale leaves, rinse the head under running water, chop finely and add salt. Then thoroughly mix the resulting mass. Peel mango, remove the seeds and cut the fruit into small cubes. Grind nuts and mix with honey, mustard, oil, vinegar essence, and pepper. Mix kale, mango, and the resulting mass. Serve mango kale salad with croutons of rye bread.
