Blueberry Corn Salad

Someone may consider that there is no place for blueberry in the salad, but everybody knows how tasty and, what’s more, how healthy it is. Therefore, here is couple of recipes with blueberry. In addition, to add more uniqueness to your salads, there will be corn too.

First variant. Ingredients for 4 portions: 350 g of chicken, 200g of corn, 80g of feta, 80g of blueberry, half of red onion, 2-3 soupspoons of sour cream, half of lemon, some olive oil, some dill, salt, pepper.

In the original recipe, a chicken filet has to be grilled and already after that cut into pieces. If you do not have such possibility at home, you can simply cut a filet finely, sprinkle olive oil, add salt, pepper and roast on a frying pan to readiness.

Chop dill and onion finely. Cut feta into small pieces and lay it out into a separate plate. Put there sour cream; add lemon-juice, salt and pepper. If priming turns out too thick, then add a bit sour cream or mayonnaise. Finally, mix a bow, grains of corn and pieces of chicken filet with priming. Lay it out into a dish. From above we sprinkle with a dill and blueberry.

Meat&berries. Ingredients: 1 avocado, 100g of cherry-tomatoes, 100g of blueberry, 200g of chicken fillet, 50g of corn, 100g of lettuce, 150g of feta, 4 stripes of bacon, 2 teaspoons of honey, 1 soupspoon of olive oil, 1 teaspoon of vinegar, 2 teaspoons of lime juice.

Chop avocado and chicken breast. Cut a bacon finely. Cut cherry tomatoes into few parts. Tear lettuce with your hands on shallow pieces. Mix up in a bowl leaves of lettuce, corn, hen, avocado, blueberry, tomatoes, bacon and feta. Add salt and pepper, mix carefully once again.

In another bowl fluff up a lime juice, honey, olive oil and vinegar together. Combine and mix carefully. Enjoy!
