Italian Chickpea Salad with Roasted Garlic and Maple Dressing

Salad is one of the favorite Italian dishes. In each area you can sample dozens of different kinds of Italian salad, which are prepared by unique recipes. Italians serve it in addition to fish and meat dishes. The main distinguishing feature of Italian salads is that they are almost never filled with sour cream or mayonnaise. As filling Italians traditionally use only cold pressed olive oil and balsamic vinegar. In addition, the individual feature of Italian salad is that all the ingredients are cut into large chunks. To improve the taste and delicate aroma imparting decided to add a lot of herbs in it. Recipes of Italian salad can vary your menu. You will surprise and please the guests and home mates, by serving genuine, hearty food – Italian salads.

To prepare Italian salad with pasta you will need: 100 g of pasta, pepper (half of red and yellow one), large tomato, cucumber, olive oil, salt, ground black pepper, lettuce, any greens. For Italian salad with pasta wash well and wipe tomato and cucumber with a towel. Cut them into large cubes. Then clean the peppers and cut them into small cubes. In the bowl for salad combine cucumber, tomato, pepper. Pasta is boiled in salted water until tender. It is important not to digest it. Put cooked pasta on a sieve or colander to get rid of water. Wash lettuce, dry on a towel, and tear with hands into large pieces. Greens are chopped. Prepare the filling. Connect olive oil with chopped herbs, add pepper. Optionally, you can add a couple drops of lemon juice. Connect the pasta and vegetables. Add dressing.

Italian Artichoke Salad

Italian salad with shrimps is very light and tasty. To prepare the salad you will need: 500 g of boiled shrimps, 2 bunches of lettuce, 200 g of tomato ketchup, 100 g of sour cream, 100 g of mayonnaise, 2 cloves of garlic. Soak shrimps in boiling water (as indicated on the packaging), peel them. There is a fact that ready-peeled shrimps are not as juicy and delicious. Cut the lettuce leaves. You can tear them with your hands. Put the salad on flat plate. Lay shrimps on top. Pour the sauce, prepare it as follows. In a cup combine the mayonnaise, sour cream and ketchup (better not to use sharp and sweet). Ketchup is better to add at once, but in small portions to the sauce so that it had a nice pink color. Pass garlic through the press and add to the sauce. This Italian salad is particularly well with white dry wine.
