Quinoa and Edamame with Corn Salad

Quinoa is a product, which entered the top 20 most useful food in the world. Quinoa is not a cereal crop in the strict sense, but is a fruit, leafy vegetables, spinach related, but in cooking it is apprehended as some variety of grains. There are three main types of quinoa – red, black and plain, cream color. There is no particular difference between them neither in any nutrient, nor in culinary respect.

Profit of quinoa is that it has ten times more vitamins and nutrients than other similar products. In the quinoa there are more riboflavin, fiber, complex carbohydrates and folic acid than in wheat, barley and rice. If this quinoa is almost completely absorbed by the body, in this property it can compete unless with the mother’s milk (which we cannot eat all our life, unlike quinoa). The rump quinoa contains a sufficient amount of lysine – an amino acid that contributes to a better absorption of calcium, which in turn is essential for the formation of strong healthy skeleton, bones, hair and teeth. It is important to note that barley quinoa does not contain gluten – a substance causing an allergic reaction, so even allergies can eat it.

Yummy Quinoa and Edamame Salad

Here’s a bright vegetable quinoa and edamame salad we offer to cook, and once in large portions to be enough for the whole family. In summer, the quinoa and edamame salad can be submitted on the barbecue, to cook it in advance at home. In winter, it makes up for the lack of vitamins and is an excellent dish for lunch, dinner, and maybe even a full breakfast.

To cook quinoa and edamame salad you will need: 1/2 cup of quinoa, 1/2 cup of edamame, 1 cup of water, 1/2 tsp. of salt, 200 gr of green beans, 1 sweet pepper, 1 onion, watercress, 4 tbsp. of olive oil, 3 tbsp. of lemon juice, 1 tsp. of soy sauce, 1/2 tsp. of Tabasco sauce, 1/2 tsp. of ground paprika, 1 tsp. of liquid honey.

Cook the quinoa and edamame by the basic recipe, cool. Wash shrimp and boil in salted water for 2 minutes, rinse with cold water and discard in a sieve. Wash sweet peppers and cut them into strips. Cut off the tips of the beans, and then chop. Boil the water and boil beans for 5-10 minutes (depending on what kind of beans you have), rinse with cold water and discard in a sieve. Chop the onion chives. Prepare the filling for quinoa and edamame salad. For this mix all ingredients and whisk. Mix the quinoa with vegetables, season with seasoning mix. Garnish quinoa and edamame salad with watercress sprouts.
